Eric Flack's Gooey Bars

This recipe came from Eric's wife. Eric says the Gooey Bars are "NOT exactly fat free, but soooooooo gooooooood."

Crust Ingredients:

  • 1 pkg yellow cake mix
  • 8 tbsp. butter, melted
  • 1 large egg

Filling Ingredients:

  • 1 8 oz. pkg cream cheese at room temperature
  • 2 large eggs
  • 1 tsp. pure vanilla extract
  • 8 tbsp. butter, melted
  • 3 3/4 cups sifted powdered sugar


  1. Preheat oven to 350 degrees
  2. In large bowl, mix crust ingredients with electric mixer until smooth and forms a ball
  3. With fingertips, pat the crust batter evenly into the bottom of 13x9" ungreased baking pan; smooth out top and set pan aside
  4. For the filling, blend cream cheese in same bowl in which the crust was mixed (no need to rinse out); beat with electric mixer until fluffy
  5. Once fluffy, add eggs, vanilla and butter and mix until smooth
  6. Add powdered sugar last, and blend until sugar is well-blended
  7. With a spatula, spoon all the filling onto the crust so that all the crust is covered
  8. Place in center of oven rack and bake until well-browned and the middle still jiggles when you shake pan (about 45-47 minutes)
  9. Remove from oven and allow to cool
