Kevin Harned's Secrets of Louisville Chefs' Vegetarian Chili with Salsa

Chili Ingredients:

  • 1 tsp. olive oil
  • 6 garlic cloves, crushed
  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 15 oz. can black beans, drained and rinsed
  • 1 8 oz. can pureed tomatoes
  • 1 1lb. can whole tomatoes, cut into quarters with juice retained
  • 1 can green chilis
  • 1 tbsp. cumin
  • 1 tbsp. dried oregano
  • 1/2 tsp. cayenne pepper (add more to taste)
  • Juice of 1/2 lime

Salsa Ingredients:

  • 2 red onions, diced
  • 1/2 cup cilantro, chopped
  • 4 ripe tomatoes, seeded and diced
  • Juice of 1/2 lime
  • 1/4 cup fresh parsley, chopped

 

Chili Directions:

  1. Heat the olive oil in a large pan and saute the garlic, onion and green and red peppers
  2. Add the black beans, tomato puree, whole tomatoes, green chilis, cumin, dried oregano, cayenne pepper and lime juice
  3. Season with salt and freshly ground pepper
  4. Cover and simmer 1-2 hours

Salsa Directions:

  1. Combine all salsa ingredients
  2. Season with salt and pepper
  3. Dollop over chili
