Beef and Scallion Tortilla Roll-Ups


3 oz. Cream Cheese, softened
1/4 cup Drained Bottle Horseradish
Six 8-Inch Flour Tortillas
1 lb. Rare Beef, thinly sliced
6 Thin Scallions, cut into lengths the diameter of tortillas


Preheat oven to 350 degrees.

In a small bowl, stir together Cream Cheese and Horseradish.

Wrap Tortillas in foil and heat in oven until warm and soft (about 5 minutes).

Working with 1 Tortilla at a time and keeping remaining Tortillas wrapped in foil, spread some Cream Cheese mixture on one side of each Tortilla, leaving a 1/2-inch border.  Cover with several slices of Beef.  Arrange a Scallion at one end of Tortilla and beginning with Scallion end, roll up Tortilla, enclosing Beef and Scallion.

Cut each roll diagonally into thirds and transfer to a serving platter.
