2 Firm, Ripe Bose Pears
1 tbl. Coarse Freshly Ground Black Pepper
2 tbl. Unsalted Butter
1 tbl. Fresh Lemon Juice
2 oz. Blue Cheese
Halve Pears lengthwise and core. Cut Pears lengthwise again into 1/4-inch-thick slices and sprinkle Pepper on both sides.
In a large nonstick skillet, heat 1 tbl. Butter over moderately-high heat. Saute half of Pear slices until golden brown, about 1 1/2 minutes on each side.
With a spatula, transfer sauteed Pears to a plate and drizzle wiht 1/2 tbl. Lemon Juice.

Fried Sage Leaves
3 cups Vegetable Oil
1/2 cup Fresh Sage Leaves, loosely packed
In a heavy saucepan, heat 1-inch Oil until it registers 365 degrees (using a deep-fat thermometer). Working quickly, fry Sage Leaves, 5 at a time, for 2 seconds.
Transfer with a slotted spoon to paper towels to drain. Immediately sprinkle Sage Leaves with Kosher Salt to taste.
