Filetto Al Gorgonzola


4 oz. Center-Cut Filet of Beef Tenderloin
1 oz. Gorgonzola Cheese
1 tbs. Wild Mushrooms
1 tsp. Shallots
1 oz. Reciota Wine
1/4 tbs. Fresh Parsley
1/2 tsp. Butter
Salt & Pepper


Place Butter in skillet.  Add Shallots, Sliced Mushrooms, a splash of Reciota Wine, Salt & Pepper .

Remove from heat, add Gorgonzola and Parsley.  Let cool.

Make a pocket in the center of the Filet and put a tablespoon of the filling in the pocket.

Cook filet accordingly.
