Forestier Sauce

INGREDIENTS

1 lb Quartered Mushrooms
8 oz. Diced Onion
1 lb. Bacon cut into 1 in. pieces
5 oz. Red Wine
1 tsp Thyme
1 Bay Leaf
5 tsp Cavenders
10 oz. NY Strip Steak, sauteed to order 

DIRECTIONS

Cook Bacon until golden brown in a large pot.

Add Mushrooms and Onions and cook for 3 minutes.  Add Red Wine, Thyme, Bay Leaf, and Cavenders.

Simmer for 5 minutes.  Cool.  Keep Refrigerated.
