1/2 pound lean ground beef
2 tablespoons taco seasoning
36 "Scoop" tortilla chips
Guacamole, purchased or homemade (I like Wholly Guacamole)
Refrigerated Salsa
1/2 cup sharp cheddar cheese, very finely shredded
Iceberg lettuce, finely shredded
Sour cream
Finely minced jalapeño pepper and cilantro
Cook the ground beef, breaking it up so that the texture is fine. Sprinkle 2 tablespoons taco seasoning over the beef. Add 1/4 cup water and cook until all the water has evaporated. Break up the beef as small as possible using a metal spatula.
Spoon 1 teaspoon of guacamole in each "scoop" chip. Top with 1 teaspoon of beef. Top with ½ teaspoon salsa and 1 teaspoon cheese. Top with a small amount of finely shredded lettuce, a drizzle of sour cream and a sprinkling of finely minced jalapeño and cilantro. Serve.
