Moroccan Potato Salad


2 lbs New Red Potatoes, cut in half
1/2 cup Onion, chopped
1/2 cup Parsley, chopped
1/4 cup Cumin
1/4 cup Parsley, chopped
1/2 cup Extra Virgin Olive Oil
1/4 cup Red Wine Vinegar
Salt and Pepper to taste


Boil or steam the Potatoes until done to your liking.

Combine all ingredients in large bowl.  cover and refrigerate.
