Mongolian Quick Fried Tenderloin

FILETS
8 2oz center cut beef filets

VEGETABLES
2T olive oil
1 bunch Kentucky grown asparagus (use only the tips)
1 head Kentucky grown bok choy cut into crescents
8 Kentucky grown shitake mushrooms cleaned and sliced
1t ground ginger
1T minced garlic salt and pepper to taste

SAUCE
¼ cup teriyaki sauce
4 dashes chiptle hot sauce
1 bunch fresh cilantro chopped fine
1T olive oil

TO PREPARE VEGETABLES 

In a saute pan heat 2T oil over high heat. 

Add bok choy, ginger, and garlic, saute for about 1 minute. Add asparagus and mushrooms; saute until all vegetables are tender. 

Place vegetable in middle of serving plate; sprinkle with salt and pepper.

TO PREPARE FILETS 

In same saute pan over high heat add 1T oil. 

Place filets in pan and sear on each side. This will take approximately 1 minute per side. 

When filets have been seared place on serving plate with vegetables

TO PREPARE SAUCE 

Add teriyaki sauce, chiptle hot sauce and cilantro to same pan. 

Saute until hot and pour over meat and vegetables.
