Recipe: Grilled shrimp & scallops from the North End Cafe

LOUISVILLE, KY (WAVE) - Christopher Seckman, Chef/Owner of North End Cafe, stopped by WAVE 3 Sunrise to show how to plan a tapas party for your next summer cookout. Seckman demonstrated favorites from his small plates menu like Grilled Shrimp Piri Piri that's marinated in garlic, cilantro and jalapeno and Grilled Scallops with pineapple salsa and plantain chips.

Grilled Shrimp & Scallops Piri Piri with Pineapple Salsa

Ingredients:

  • Shrimp
  • Scallops
  • 10 hot red chiles or other hot peppers
  • ¼ c. lime juice
  • ¼ c. cilantro
  • ¨û c. parsley
  • 5 cloves of garlic
  • ½t salt
  • ¼-½ c. olive oil

Put all ingredients except shrimp/scallops and oil in food processor and run until smooth.  Drizzle in oil until it is incorporated. Toss shrimp in marinate and chill until ready to grill. Serve with pineapple salsa and plantain chips, recipe follows.

Pineapple Salsa:

Ingredients:

  • 1c. small diced pineapple
  • ¼ c. small diced red onion
  • ¼ c. small diced red peppers
  • ¼ c. chopped cilantro
  • ¼ c. lime juice
  • ¼ c. olive oil
  • 2T balsamic vinegar
  • Salt to taste
