Chris McGill's Meatloaf Recipe

Note: I don't really follow "portion" directions for ingredients, kind of like I don't read directions on products to assemble or ask for directions when I'm lost. After all, I am a man. I make this from memory, so portions are estimated.


  • 2lbs. ground beef (I prefer 80% lean)
  • 1/2 onion, diced
  • 1/2 green pepper, diced
  • 1 or 2 eggs
  • 1 cup dried bread crumbs or crackers (I prefer cracker crumbs)
  • Worcestershire Sauce – 3 tablespoons or as much as you'd like
  • 2 tablespoons garlic salt or onion salt (optional)
  • Salt and pepper to taste 

Mix all ingredients together, making a loaf. Drizzle sauce on top of meatloaf. Preheat oven to 350 degrees and bake 60 to 90 minutes, depending on how you like your meat cooked. I like mine to be done!

Sauce Ingredients:

  • 1 cup Brooks Ketchup (Any brand will work, but I prefer Brooks because it's a little sweet.)
  • 2 tablespoons sugar or brown sugar
  • Add approximately 1/4 cup water to make the mixture a little less thick

Put some of the sauce over the meatloaf before cooking. The remainder of sauce can be heated and mixed with drippings from the meatloaf after it cooks to make a nice, sweet gravy if desired.
