S&J Breakfast Burrito
1 Diced Red Pepper
1 Diced Green Pepper
1 Diced Orange Pepper
Zest of one lemon
1 Tablespoon Fresh Squeezed Lemon Juice
1 Tablespoon Fresh Squeezed Lime Juice
1 Clove Crushed Garlic
2 Tablespoons Olive Oil
1/4 Teaspoon Sugar
Salt and Pepper to Taste
Chop peppers and combine with remaining ingredients.
1 Pound Chorizo Sausage (cooked and drained) Grated Monteray Jack Cheese Scrambled Eggs Flour Tortillas
Place cooked eggs, chorizo and grated cheese in flout tortilla. Fold tortilla to seal in contents. Place tortilla in a clean non-stick skillet over a medium flame. Cook tortilla until lightly golden on all sides. Remove from pan and garnish with salsa, sour cream and hot sauce as desired.
