Preheat oven to 350 degrees. Over medium heat in a large pan, sauté onions and garlic in the olive oil until the onions are translucent. Add the SPAM and cook for approximately 5 more minutes, stirring frequently. Combine the cheese, roasted tomatoes and the SPAM mixture. Stuff the peppers with the SPAM and cheese filling. Place the stuffed peppers in a shallow, non-reactive baking dish and bake for approximately 25 minutes. While peppers are baking, prepare the sauce. In a blender or food processor, puree the chipotle peppers. In a small sauce pan, combine the heavy cream and chipotle peppers. Over medium heat, reduce to approximately 1 cup. Stir in the lime juice. When the stuffed peppers are ready, divide the sauce among 4 plates. Top with a SPAM stuffed poblano pepper.
