Candied Peanuts

1 lb. Peanuts

2 egg whites

1 c. sugar

Preheat oven to 350. Whip egg whites until frothy. Toss peanuts with egg whites and sugar. Place on a parchment lined baking sheet. Bake for 20 minutes or until egg whites have cooked into the peanuts. Once they have cooled, place peanuts in a food processor and chop semi-fine. Yield: 1 lb.
