Certified Angus Beef Flat Iron Steak Sandwich with Blue Cheese Crumbles, Homemade Worcestershire Sauce Carmelized Onions on Toasted Kaiser Bun

Flat Iron Steak Sandwich

INGREDIENTS

8 Ounce Flat Iron Steak (Top Blade Steak filleted)
House Seasoning *
1 Medium onion (thinly sliced)
2 Tablespoon Blue Cheese Crumbles
1 Tablespoon of Homemade Worcestershire Sauce *
1 Kaiser Bun
3 Tablespoons of Olive Oil
1 Tablespoon of Butter

DIRECTIONS

  1. Season Flat Iron Steak with house seasoning
  2. Grill to desired temperature (At least 145¢ªF- medium rare)
  3. Melt butter in sauce pan and add onions (allowing them to carmelize)
  4. Top steak with onions and Blue Cheese crumbles
  5. Finish with 2 tablespoons of homemade Worcestershire sauce.
  6. Brush butter on bun and grill until golden brown

Homemade Worcestershire Sauce

INGREDIENTS

2 Tablespoons olive oil
4 Cups coarsely chopped yellow onions
3 Jalapenos, chopped (including stems and seeds)
2 Tablespoons minced garlic
3 2-ounce cans anchovy fillets
2 Medium lemons, skin and white pith removed
12 Ounces fresh horseradish, peeled and grated
2 Quarts white distilled vinegar
4 Cups water
4 Cups dark corn syrup
2 Cups Sorghum¡¯s molasses
2 Tablespoons salt
¨ö Tablespoon whole cloves
3 Teaspoons freshly ground black pepper

DIRECTIONS

  1. Combine the oil, onions, and jalapenos in a large stockpot over high heat 
  2. Cook , stirring, until the onions are slightly soft (2-3 minutes) 
  3. Add the garlic, anchovy fillets, lemons, horseradish, vinegar, water, corn syrup, molasses, salt, cloves, and pepper and bring to a boil 
  4. Reduce the heat and simmer, uncovered, stirring occasionally, until mixture is reduced to about 6 cups (will barely coat the back of wooden spoon, 6 hours) 
  5. Strain through fine-mesh strainer into a clean container 
  6. Store in cool, dark place for at least 2 weeks before using

House Seasoning 

INGREDIENTS

4 Cups Mesquite seasoning
5 Cups roasted garlic pepper
1 Cup roasted garlic (granulated)
¨ö Cup onion powder
2 Tablespoons ground oregano

DIRECTIONS

Mix thoroughly and store in airtight container
