Corn with husks still on
½ Pound whole unsalted butter
¼ Cup roasted garlic, minced
2 Tablespoons flat leaf Italian parsley
Salt and pepper to taste
- Whip butter in mixer. Add remaining ingredients.
- Spray half sheet of parchment paper with Pam.
- Shape butter into cylinder shapes and refrigerate.
- Cut butter cylinders into coins.
- Soak corn, with husks on, for 1 1/2 hours.
- Baste corn with the butter, then re-wrap with husks.
- Grill or roast for about 10 minutes
