Roasted and Grilled Corn on the Cob with Roasted Garlic Compound Butter


Corn with husks still on
½ Pound whole unsalted butter
¼ Cup roasted garlic, minced
2 Tablespoons flat leaf Italian parsley
Salt and pepper to taste


  1. Whip butter in mixer.  Add remaining ingredients.
  2. Spray half sheet of parchment paper with Pam.
  3. Shape butter into cylinder shapes and refrigerate.
  4. Cut butter cylinders into coins.
  5. Soak corn, with husks on, for 1 1/2 hours.
  6. Baste corn with the butter, then re-wrap with husks.
  7. Grill or roast for about 10 minutes
