Artichoke Stuffed Chicken Breast

boneless chicken breasts 4-5
artichoke hearts (1 jar)
cheddar cheese (1 cup)
mozzarella cheese (1 cup)

1.  Cut a pocket in the chicken breast for stuffing
2.  Drain the artichoke hearts and dice into bite size pieces
3.  Mix the hearts with both cheddar and mozzarella cheeses in a separate bowl
4.  Season breasts with salt and pepper to taste
5.  Take mixture and stuff each of the chicken breasts
6.  Dredge the breasts in flour, pat off the excess
7.  In a skillet, heat 2 Tlbs of oil and sear breasts on both sides until golden brown
8.  Remove breasts from skillet and place on cookie sheet
9.  Place seasoned breasts in oven for 15-18 minutes at 350 degrees
