Ice cream shoppe to get 'comfy' in Highlands

LOUISVILLE, KY (WAVE) – A locally-owned ice cream shoppe is going to replace another locally-owned business at a high traffic intersection in Louisville's Highlands neighborhood. The Comfy Cow will move into the spot that Heine Brothers Coffee will soon vacate at Bardstown Road and Eastern Parkway.

Tuesday, co-owner of The Comfy Cow Tim Coons-McGee confirmed the company's plans to settle in to the Highlands. The opportunity to expand came after Heine Brothers co-owner Mike Mays called Coons-McGee to offer them the location.

"He could barely get the sentence out before I said yes," said Coons-McGee.

On February 28 Heine Brothers announced the decision to close Eastern Parkway shop. Mays said since the company's original location on Longest Avenue is just under 1/2 mile away it made more sense to have one location.

Heine Brothers will serve its last latte on Eastern Parkway March 16, but will still be open for business on Longest Avenue. After being there for two decades the owners are also planning to remodel the shop.

The Highlands will be the fourth Louisville location for The Comfy Cow. Coons-McGee said they are excited and, even though it will be a lot of work, they hope to be open for business the first weekend in May.
