Recipe: Igby's Sweet Scarlett Arugula Salad

Chef Lauren from Igby's has created a fresh, Spring salad that anyone can make at home. The Sweet Scarlett Arugula Salad has a citrus vinagrette dressing and an avocado puree. The vinagrette contains grapefruit, which has it's own natural sweetness, allowing for no necessary sugars to be added. 

Citrus Vinaigrette

1 grapefruit

.75 oz lemon juice

.75 lime juice

3 cups of extra virgin olive oil

1 minced shallot

2 TBSP of honey

Salt and pepper to taste 

Yields: 1Qt 

 

6oz of baby arugula

4oz of cleaned frisée

1oz of shaved Pecorino Toscano

2oz toasted hazelnuts

1 small diced avocado

1 grapefruit segmented and cut into supremes (smaller pieces)

 

Avocado Purée

2 avocado

1 lemon

1 lime

2 TBSP  

Salt and pepper to taste

Yields: 1.5 cups
