RECIPE: Gramma Debbie’s Emperor Rice Salad

Debbie Gannaway of Gramma Debbie's Kitchen in Findlay Market visited the FOX19 Morning Xtra Friday and made Emperor's Rice Salad.

Check out the recipe below.

What you'll need:

2 cups Black Rice, aka Emperor's or Forbidden Rice

4 cups Water

½ cup Cherry Raspberry Vinaigrette (see recipe below)

½  cup Grape or Cherry Tomatoes, cut in half

½  cup Edamame, shelled

1 bunch Green Onions, thin sliced

Method:

Put rice and water in a pot with a tight fitting lid, bring to a boil then simmer until tender, should be about 30 minutes.

Add half of the vinaigrette to rice while still warm.  Chill, then add vegetables and add more vinaigrette to taste.

This dish is best served at room temperature. 

Cherry Raspberry Vinaigrette:

1 cup EVOO, Extra Virgin Olive Oil

½ cup Raspberry Vinegar          

1 tbsp salt        

1 tbsp pepper

½ cup Sour Cherry Syrup

½ cup Maple Syrup
