Porcini's Cannoli Filling

Ingredients:

  • 1 pint ricotta cheese
  • ½ cup mascarpone
  • 1 cup powdered sugar – extra for dusting
  • ¼ cup gold raisins
  • ¼ cup sundried cherries
  • 1 ounce amaretto
  • Lemon, lime and orange – zest of each
  • Almonds for garnish

Blend all ingredients together in a large bowl and fill the cannoli shells. Dust with extra powered sugar and garnish with almonds.

Yields – 6 cannolis
