Vegetable Broth

10 cups water
1 onion, sliced
1 carrot, peeled and sliced
1 stalk celery, sliced
1 cup parsley, minced
1 clove garlic, chopped
dash of salt
In a large pot over high heat, combine all ingredients except salt. Bring to a boil. Reduce heat to low. Simmer 15 minutes. Strain liquid and discard solids. Season with salt.
Editor's Note: This broth can be stored in the freezer for about six months.
