Oven Barbecue Beef

3-1/2 lb. chuck roast
2 tbsp. shortening
2/3 c. ketchup
1/2 c. brown sugar
1/4 c. lemon juice
1 tsp. hot sauce
1 tsp. dill weed
1 clove garlic, minced
1/4 c. onion, chopped
1-1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. dry mustard

Melt shortening in Dutch oven. Brown beef on both sides. Combine all remaining ingredients and pour over beef. Cover and bake two hours at 350 degrees. Remove cover and continue to bake 1 hour or longer, or until tender. Baste frequently. Sauce will thicken as liquid evaporates. Spoon sauce over beef and serve on buns.
