HoneyBakedÒ Ham and Cheese Quiche

1 ½ c. cubed HoneyBakedÒ Ham
½ lb. HoneyBakedÒ Bacon, crisp cooled
1 c. shredded Cheddar cheese
1 c. shredded Cojack cheese
1 small onion, chopped
1 jar (2 ½ oz.) sliced mushrooms
2 c. milk
4 eggs, beaten (or 1 c. egg substitute)
1/2 c. biscuit baking mix
¼ tsp. salt
¼ tsp. Pepper 

Preheat oven to 400 F.  In bottom of greased 9” pie pan, layer ham, bacon, chesses, onion and mushrooms.  In medium bowl, combine milk, eggs, biscuit mix, salt and pepper; beat well.   Pour over ham and cheese mixture.  Bake at 400 F for 10-minutes; reduce temperature to 350 F and cook for 40 to 45 minutes.

 Recipe yields four to six servings.  Serve with marinated vegetable salad and fruit muffins.
