Sauteed Spinach

1/4 c. olive oil
1/4 c. chopped onion
2 tsp. unsalted butter
1 tsp. chopped garlic
1 lb. fresh spinach
Black pepper


In a saute pan, heat olive oil over medium high heat. Add onion, butter and garlic. Add spinach; toss with tongs until wilted. Add salt and pepper to taste; toss to combine. Using tongs, place spinach on paper towels to absorb excess moisture.
