Macadamia Encrusted Salmon with an Orange Butter Sauce

2 - 8 oz.  Salmon Filets
4 oz.   Flour
2 oz  Macadamia nuts toasted
4 oz.   Salad Oil
Salt and Pepper
2  Eggs
2 oz.  Milk

Orange Butter Sauce
1 cup  Orange Juice
4 oz.   Butter
1 oz.   Honey

If the salmon filet is thick cut on a bias to cook faster.  Grind macadamia nuts in coffee grinder or food processor and then mix with the flour, salt and pepper.  In a mixing bowl whisk the eggs and milk together and then coat salmon with this mixture followed by the macadamia flour.  In a saucepan heat the oil and fry fish on both sides.  If it gets too dark finish it in the oven.

In a saucepan reduce orange juice and honey until it thickens.  Allow remaining mixture to cool a bit and then whisk in butter over low heat.
